Sopa de tomate com ovos

Depois de um interregno (a primavera tem destas coisas, pólens, sinusites e assim) estou de volta.

E trago o calor, como podem ver na imagem. E por incrível que vos possa parecer, nada melhor que uma boa sopinha para estes dias - sim, sopa é bom para os das frios e é bom para os dias quentes., dependendo da sopa. E eu adoro sopa, acho que já todos repararam...

E se dúvidas restarem, basta reparar na origem desta sopa encorpada. Vem do Alentejo, onde tenho as minhas raízes e onde se faz as melhores sopas de pão do mundo. Sim, para fazer a sopa de tomate com ovo, vais precisar de pão fatiado, de preferência de um dia para o outro.

É super simples de fazer e sabe tão bem!! Estas quantidades dão para uma pessoa.

Então, numa panela deita um fio de azeite e uma cebola grande picada. Deixa a cebola aloirar e junta-lhe quatro tomates bem maduros, limpos de sementes, cortados em cubos. Assim que o tomate estiver mole, junta duas chávenas de água, sal e pimenta a teu gosto e meio frasco de feijão-encarnado. Quando a água começar a ferver, abre um ou dois ovos (conforme o teu gosto, quando como ovos faço sempre dois) e deixa escalfar em lume baixo. Quando a clara estiver branca, apaga o lume e junta um ramo de coentros picados.

Num prato, dispõe as fatias de pão e deita a sopa bem quente por cima.

And I bring the warm days, how you can see in the first image. Incredibly, there's nothing better than a good soup for days like these - yes, soup is great for cold days and is still great for hot days, dependng on the kind of soup. And I love soup, as you can see...

If there's any doubt, it's enough to see where this soup comes from. Its origins are in the hot planes of the Alentejo, where I have my roots and where you can eat the best bread soup in all world. Ah, yes, to make this tomato soup with poached eggs, you'll need bread, preferably overnight bread.

It's super simple and it tastes reeeeaaaally good. This recipe means one serving.

So, warm a little olive oil in a pan and fry a big diced onion. When the onion is tender and brown-ish (no burning, please!), put four rpe tomato, seedless and dices. When the tomato's tender pour two cups of water, salt and pepper and half a jar of red beans. Let it boil, and poach one or two eggs (depending on your taste,  always do it with two eggs) in low heat. When the egg yolk is white, turn the heat off and sprinkle some chopped coriander

In a soup plate, dispose some slices of overnight bread and pour the steaming hot soup.

Chowder de milho

Com o frio que se tem feito sentir nestes últimos dias, sabe bem chegar a casa e aquecer por dentro. Para isso, uma das melhores receitas que conheço é o chowder de milho, uma sopa cremosa e forte, de origem norte-americana, que é servida bem quente, simples ou acompanhada de bolachas de água-e-sal ou tostinhas. 

Este prato pode ser adaptado à cozinha vegetariana, bastando para isso retirar o bacon e acrescentar um pouco mais de manteiga à receita original. Experimenta e diz lá se não te aquece até à alma.
Para quatro doses de chowder:

  • Uma colher de sopa de manteiga
  • Uma tira grossa de bacon (ou 1/2 colher de sopa de manteiga para a opção vegetariana)
  • Meia cebola grande, picada
  • Meia cenoura grande, picada
  • Meio talo de aipo, picado
  • Duas chávenas de milho doce (ou uma lata se não usares retirado da maçaroca)
  • Uma folha de louro
  • Três chávenas e meia de leite, gordo ou meio gordo
  • Uma batata média, cortada em cubos
  • 1/4 de pimento vermelho, cortado em cubos
  • Sal, pimenta e salsa
Numa panela larga, derrete a manteiga em lume médio. Junta o bacon cortado em pedaços e frita até derreter a gordura, mas sem deixar alourar. Salta este passo se fizeres a versão vegetariana, apenas junta mais manteiga. Acrescenta a cebola picada e salteia por 4 a 5 minutos, até amolecer. Junta a cenoura e o aipo e cozinha mais 4-5 minutos.
Junta o leite e o louro, deixa ferver e reduz o lume para o mínimo. Tapa a panela e deixa cozinhar durante meia hora. Certifica-te que o calor está baixo, mas que a fervura se mantém, para evitar que o leite se queime no fundo.
Retira o bacon e o louro, aumenta o calor e junta a batata, o pimento, sal e pimenta. Quando levantar fervura volta a baixar o lume e deixa cozer até as batatas ficarem macias.
Aumenta de novo o calor e junta o milho. Quando voltar a ferver, deixa cozinhar cinco minutos em lume baixo.
Serve bem quente, em tigelas fundas ou mesmo numa caneca, polvilhado com salsa picada e o bacon.


Corn chowder

With these last cold days, how good it is to arrive home and eat something to warm you inside! One of the best dishes I know that brings a little of warm, I would say like a "food-hug", is corn chowder, a creamy, strong soup. It's originated from the United States and is served steaming hot, simple or with saltines.

The recipe can be adapted to vegetarian, simply by avoiding bacon and adding a bit more butter. Try it and tell me - it warms until your very soul. 

To make four servings of corn chowder, you'll need:
  • 1 TBSP butter
  • 1 strip of bacon (substitute 1/2 TBSP of butter for vegetarian option)
  • 1/2 large onion, chopped
  • 1/2 large carrot, chopped
  • 1/2 celery stalk, chopped
  • 2 cups of sweet corn, or one can
  • 1 bay leaf
  • 3 1/2 cups milk, whole or low fat
  • 1 medium potato, peeled and diced
  • 1/4 red bell pepper, chopped
  • Salt and fresh ground pepper
  • A pinch of parsley
In a large pot, melt the butter over medium heat. Add the bacon strip, diced (skip this step for vegetarian option, just add more butter) and fry until the bacon renders its fat, but doesn't begin to brown, for 3 or 4 minutes. Add the onion and sauté for 4 to 5 minutes until soft. Add the carrot and celery and cook for 4 or 5 more minutes.

Add the milk and bay leaf. Bring to a boil and reduce heat to a bare simmer. Cover the pot and cook for 30 minutes. Make sure the heat is as low as can be and still maintain a gentle simmer to prevent burning the milk on the bottom of the pan.

Discard the bacon strip and the bay leaf. Raise the heat, add the potatoes, red pepper, salt and fresh ground pepper to taste, bring to a simmer and reduce the heat to maintain it for 15 minutes or until the potatoes are fork tender.

Raise the heat and add the corn kernels. Bring to a boil, reduce the heat, and simmer for 5 minutes. Serve it steaming hot in a deep bowl or even in a cup, with chopped parsley and the bacon.
